Sandwich du Bookmaker (The Bookmaker's Sandwich)

  1. Take a square English sandwich loaf and detach the two end pieces that form the crust, leaving a centimetre of crumb attached to each; butter them.
  2. Grill a thick beefsteak, well seasoned with salt and pepper, and set it to cool.
  3. Scatter grated horseradish over the steak and sprinkle it with mustard.
  4. Place the steak between the two pieces of bread and tie the whole up as for a galantine.
  5. Wrap the parcel in several sheets of blotting paper.
  6. Put it under a copying press, tightening the screws gradually, and leave it for half an hour.
  7. Take it out and remove the blotting paper — the crumb will have been saturated with the meat juices, which the crust prevented from escaping.
  8. Pack the sandwich in a box, or in one or several sheets of white paper.
