Soufflé Piémontais (Piedmontese Maize-Flour Soufflé)

Ingredients

Instructions

  1. Boil the milk with the salt.
  2. Scatter in the maize flour and mix well.
  3. Cover and cook in a slow oven for 25 minutes.
  4. Transfer the paste to another saucepan and work it with the butter and an equal weight of grated Parmesan.
  5. Mix in the whole egg, the 3 yolks, then the 3 whites whipped to a very firm snow.
  6. Turn into a buttered timbale sprinkled with grated cheese and cook like any other Soufflé.
