Soufflé Piémontais (Piedmontese Maize-Flour Soufflé)

Ingredients
- half a litre milk
- 6 grammes salt
- 60 grammes maize flour
- 50 grammes butter
- 50 grammes grated Parmesan
- 1 egg
- 3 egg yolks
- 3 egg whites
- grated cheese and butter for the timbale
Instructions
- Boil the milk with the salt.
- Scatter in the maize flour and mix well.
- Cover and cook in a slow oven for 25 minutes.
- Transfer the paste to another saucepan and work it with the butter and an equal weight of grated Parmesan.
- Mix in the whole egg, the 3 yolks, then the 3 whites whipped to a very firm snow.
- Turn into a buttered timbale sprinkled with grated cheese and cook like any other Soufflé.
