Apple Pudding (M. W. Watkins)

Ingredients
- 6 tart apples
- sugar
- butter
- cinnamon
- very little water
- 1 egg
- 0.5 cup milk
- 1 pinch salt
- flour
- 1 teaspoon baking powder
Instructions
- Core and peel six tart apples and slice them crosswise. Layer the apple slices in a deep dish with plenty of sugar, butter in reason, cinnamon, and a very little water.
- Make the batter: Beat one egg light with half a cup sugar and butter the size of a walnut. Add half a cup milk and a pinch of salt. Sift the baking powder through the flour and add flour enough to make the batter thick enough for layer cake batter.
- Pour the batter smooth over the apples. Dot the top with bits of butter.
- Bake in a brisk, but not scorching oven for half an hour or longer if needed—the apples must be thoroughly cooked.
- Serve hot or cold, preferably hot, with hard sauce or wine sauce.
