Ingredients
- 4 eggs, yolks only
- 2 cups sugar
- 1 large spoonful butter, melted
- 1 teaspoon flour, sifted
- 1 cup buttermilk
- 1 cup raisins, seeded
- 1 teaspoon cinnamon
- pinch cloves
- pinch allspice
- pinch nutmeg
- 2 eggs, whites only
- 1 pie crust, unbaked
- 2 eggs, whites only
- 2 teaspoons water, cold
- few grains salt
- 1 cup sugar
Instructions
- Beat the egg yolks very light with the two cups sugar. Add the melted butter, sifted flour, buttermilk, seeded raisins, cinnamon, and pinches of cloves, allspice, and nutmeg. Fold in the two egg whites beaten very stiff.
- Half-bake the pie crust, then pour in the batter and cook slowly until done.
- While the pie bakes, prepare the meringue: Beat two egg whites until very light. Add two teaspoons cold water and a few grains of salt. Gradually add one cup sugar, beating continuously. Use the meringue at once—it will fall by standing.
- Spread the meringue over the hot pie and let it barely color in the oven. Serve hot or cold.
