Ondines with Pink Shrimps

Instructions

  1. Line hinged egg moulds heavily with very fine trout Mousse.
  2. Fill the middle with trimmed pink shrimp tails, close the moulds and let them set.
  3. Unmould the ondines and range them in a deep Entrée dish.
  4. Arrange a few fine pink shrimps, tails shelled, between each one.
  5. Cover the whole little by little with excellent half-set jelly, sowing a few chervil pluches between each layer, until the ondines are entirely covered.
