Consommé à la Macdonald (Strong Beef Consommé with Brain Royale, Cucumber and Ravioli)

Ingredients

• Very strong beef Consommé
• Brain purée
• Béchamel
• Cucumbers
• Ravioli
• Chicken forcemeat
• Spinach purée — one third of the forcemeat

Instructions

1. Make a royale of brain purée with Béchamel, poach it in dariole moulds and cut it into large rounds.
2. Cut the cucumbers into dice, cook them in the Consommé and glaze them well.
3. Add a third of spinach purée to the chicken forcemeat, fill the small ravioli with it and poach them at the moment of serving.
4. Garnish the very strong beef Consommé with the rounds of royale, the cucumber dice and the ravioli.
