Melon à l'Orientale (Melon Filled with Wild Strawberries and Kirsch)

Ingredients
- 1 just-ripe melon
- icing sugar
- wild strawberries
- 1 decilitre kirsch
- butter
- Gaufrettes
Instructions
- Make a circular incision around the stem of a just-ripe melon and lift out the piece.
- Remove the seeds and filaments, then detach the pulp with a silver spoon and cut it into large dice.
- Sprinkle the inside of the melon copiously with icing sugar.
- Fill the melon with wild strawberries and the diced pulp in alternating layers, sprinkling each layer with sugar.
- Finish with a decilitre of kirsch.
- Close the melon with the piece that was removed and seal the join with a cord of butter.
- Keep in a cool place for 2 hours, dress on a napkin, and serve Gaufrettes at the same time.
