Melon à l'Orientale (Melon Filled with Wild Strawberries and Kirsch)

Ingredients

Instructions

  1. Make a circular incision around the stem of a just-ripe melon and lift out the piece.
  2. Remove the seeds and filaments, then detach the pulp with a silver spoon and cut it into large dice.
  3. Sprinkle the inside of the melon copiously with icing sugar.
  4. Fill the melon with wild strawberries and the diced pulp in alternating layers, sprinkling each layer with sugar.
  5. Finish with a decilitre of kirsch.
  6. Close the melon with the piece that was removed and seal the join with a cord of butter.
  7. Keep in a cool place for 2 hours, dress on a napkin, and serve Gaufrettes at the same time.
