Sauce aux Oignons (Onion Sauce)

Instructions

  1. Slice the onions and cook them in the milk with salt, pepper and nutmeg.
  2. As soon as they are cooked, drain them thoroughly and chop them, keeping the cooking milk.
  3. Make a white roux with the butter and the flour.
  4. Dilute the roux with the onion cooking milk and bring to the boil.
  5. Add the chopped onions, keeping the sauce very thick, and let it cook gently for 7 to 8 minutes.
