Sauce aux Oignons (Onion Sauce)

Ingredients
- 200 grammes onions
- 6 décilitres milk
- salt
- pepper
- nutmeg
- 40 grammes butter
- 40 grammes flour
Instructions
- Slice the onions and cook them in the milk with salt, pepper and nutmeg.
- As soon as they are cooked, drain them thoroughly and chop them, keeping the cooking milk.
- Make a white roux with the butter and the flour.
- Dilute the roux with the onion cooking milk and bring to the boil.
- Add the chopped onions, keeping the sauce very thick, and let it cook gently for 7 to 8 minutes.
