Croquettes à la Nantaise (Fish and Mushroom Croquettes)

Ingredients
- Cooked and cold fish flesh
- Chopped mushrooms
- Fish sauce
- Egg and breadcrumbs
- Clear Sauce Tomate
Instructions
- Cut the cooked, cold flesh of one or several fish into a salpicon.
- Add chopped mushrooms to one-third of the weight of the fish.
- Bind with a reduced fish sauce.
- Shape into narrow rectangular croquettes, bread them à l'anglaise and fry at the moment of serving.
- Serve accompanied by clear Sauce Tomate.
