Œufs Mosaïque (Cold Poached Eggs in Mosaic Jelly Moulds)

Ingredients
- poached eggs
- white jelly
- scarlet tongue
- poached egg white
- truffles
- green beans
- salade russe
Instructions
- Line half-egg shaped moulds with white jelly.
- Decorate them in mosaic with small lozenges of scarlet tongue, poached egg white, truffle and green bean.
- Place a poached egg in each mould, fill up with white jelly and let it set.
- Separately, mould a salade russe in a dome mould also lined with jelly and decorated in mosaic.
- At serving time turn the salad out onto a round dish, surround it with the eggs and border the dish with croûtons of white jelly.
