Œufs Mosaïque (Cold Poached Eggs in Mosaic Jelly Moulds)

Ingredients

Instructions

  1. Line half-egg shaped moulds with white jelly.
  2. Decorate them in mosaic with small lozenges of scarlet tongue, poached egg white, truffle and green bean.
  3. Place a poached egg in each mould, fill up with white jelly and let it set.
  4. Separately, mould a salade russe in a dome mould also lined with jelly and decorated in mosaic.
  5. At serving time turn the salad out onto a round dish, surround it with the eggs and border the dish with croûtons of white jelly.
