Pommes Meringuées (Meringued Apples)

Ingredients

Instructions

  1. Spread a base of croquette rice, or of apple marmalade prepared as for Charlotte.
  2. Dress apple quarters poached in vanilla syrup on it.
  3. Cover with ordinary meringue and smooth it into the form of a dome or of a charlotte.
  4. Decorate with the same meringue and dust with icing sugar.
  5. Colour in a slow oven.
