Œufs aux Crevettes (Eggs with Shrimps)

Instructions

  1. Sur le plat: put a spoonful of shrimps in the bottom of the dish, break the eggs on top and cook them.
  2. Arrange a small bouquet of shrimp tails on each side of the yolks and surround with a cord of sauce Crevettes.
  3. Poached or Mollets: fill tartlet crusts with shrimp tails bound with sauce Crevettes.
  4. Set the eggs on top, coat them with sauce Crevettes, and arrange 4 fine peeled tails in a rosette on each.
  5. Scrambled: arrange the scrambled eggs in a timbale and set in the centre a bouquet of shrimp tails bound with a spoonful of the sauce.
  6. Surround with a cord of sauce Crevettes.
