Œufs Lili (Moulded Scrambled Eggs with Shrimp, Truffle and Lobster Coral)

Ingredients

Instructions

  1. Butter oval moulds and scatter chopped coral or shelled lobster eggs inside them.
  2. Prepare a scrambled-egg mixture with 8 eggs, 1 spoonful of cream, 2 spoonfuls of a very fine salpicon of shrimp tails and truffles, and 25 grammes of butter.
  3. Finish the mixture by adding 4 eggs beaten as for an omelette and seasoned.
  4. Fill the moulds with this mixture and poach.
  5. Turn out and arrange in a crown on a dish.
  6. Pour a light sauce aux Crevettes into the middle.
