Macédoine (Mixed Pickled Vegetables, also called « Variante »)

Ingredients
- small fresh white onions
- cauliflower
- small gherkins
- green beans
- very small chillies
- artichoke bottoms
- vinegar
- mustard
- salt
Instructions
- Lightly blanch the small bouquets of cauliflower, and blanch the artichoke bottoms and cut them into escalopes.
- Put the white onions, cauliflower, gherkins, green beans, chillies and artichoke into pots or jars.
- Boil the vinegar, mix it strongly with mustard, and salt it lightly.
- Cover the vegetables with it.
- Let the elements penetrate sufficiently with the seasoning before using the Macédoine.
