  1. Lightly blanch the small bouquets of cauliflower, and blanch the artichoke bottoms and cut them into escalopes.
  2. Put the white onions, cauliflower, gherkins, green beans, chillies and artichoke into pots or jars.
  3. Boil the vinegar, mix it strongly with mustard, and salt it lightly.
  4. Cover the vegetables with it.
  5. Let the elements penetrate sufficiently with the seasoning before using the Macédoine.
