Œufs à l'Espagnole (Eggs with Grilled Tomatoes and Fried Onions)

  1. On the dish: grill and season well as many half tomatoes as there are eggs.
  2. Fry the eggs in the pan and cut them out with a plain round cutter.
  3. Set each egg on a half tomato and arrange them in a crown on a round dish.
  4. Season and flour finely sliced onions, fry them in oil, and heap them in the middle.
  5. Scrambled: empty, season and cook 3 half tomatoes in oil.
  6. Fill them with the ordinary scrambled-egg mixture.
  7. Set a large ring of fried onion on each and scatter a pinch of chopped red pepper over the eggs.
