Lapwing Eggs à la Royale (Hot)

Ingredients

Instructions

  1. Bind chicken purée with eggs, mould it as tartlets and poach them — as many as there are lapwing eggs.
  2. Unmould them and arrange them in a circle.
  3. Take out the centre to about halfway.
  4. Stand a soft-cooked, shelled egg in each.
  5. Coat the eggs with a light mushroom purée.
  6. Sprinkle with chopped truffle.
