Pommes de terre Anna (Potatoes Anna)

Ingredients

Instructions
- Trim the potatoes into cylinders and slice them into fine rounds.
- Wash the rounds and dry them in a cloth.
- Butter richly the mould special to these potatoes, or a thick-bottomed sauteuse.
- Lay the rounds in the bottom in overlapping circular rows, each new row set in the opposite direction.
- Season, then spread a layer of butter over this first bed.
- Build a second bed the same way, its rows laid the opposite way, and continue to 5 or 6 beds, seasoning and putting a layer of butter between each.
- Cover the utensil and cook in a good oven for half an hour, turning the cake over if that is needed for an even colour.
- Turn out on to a saucepan lid to drain the butter, then slide on to the serving dish.
