Melon en Surprise (Melon Filled with a Fruit Macédoine and Wild Strawberry Purée)

Ingredients

• 1 melon
• Macédoine of fresh fruit
• the pulp taken from the melon
• wild strawberry purée
• sugar
• kirsch

Instructions

1. Empty the melon as for Melon à l'Orientale and cut the pulp taken from it into dice.
2. Sweeten a purée of wild strawberries and flavour it with kirsch.
3. Bind a Macédoine of fresh fruit and the diced melon pulp with this purée.
4. Fill the melon with the mixture, close it, and keep it in the cooler for 2 hours.
