Ingredients
- Chicken Consommé
- Tapioca
- « négresse » potatoes
- Salted water
- Artichoke bottoms
- Mushrooms
- Chervil pluches
Instructions
- Thicken the chicken Consommé lightly with tapioca.
- Shape the « négresse » potatoes into balls and cook them in salted water.
- Cut the artichoke bottoms and the mushrooms into julienne.
- Garnish the Consommé with the potato balls, the julienne and the chervil pluches.
