- white-wine court-bouillon
- potatoes
- salted water
- soft roes
- crayfish
- court-bouillon
- Sauce Valois
Instructions
- Poach the darne of salmon in a white-wine court-bouillon.
- Scoop the potatoes out with the spoon, or turn them in the shape of olives, and cook them in salted water.
- Poach escalopes of soft roe.
- Truss the crayfish and cook them in court-bouillon.
- Dish the darne with these garnishes and serve Sauce Valois separately.
