Darne of Salmon à la Valois

Instructions

  1. Poach the darne of salmon in a white-wine court-bouillon.
  2. Scoop the potatoes out with the spoon, or turn them in the shape of olives, and cook them in salted water.
  3. Poach escalopes of soft roe.
  4. Truss the crayfish and cook them in court-bouillon.
  5. Dish the darne with these garnishes and serve Sauce Valois separately.
