- chestnut purée
- 10 small truffles
- Madeira
- 20 large cock's kidneys
- Sauce Madère
Instructions
- Grill 10 large mushrooms and fill them with chestnut purée.
- Turn 10 small truffles very round and cook them in Madeira.
- Prepare 20 large cock's kidneys.
- Serve Sauce Madère as the accompaniment.
