Huîtres au Gratin (Oysters au Gratin)

Ingredients
- Oysters
- Salt
- Lemon juice
- Fried breadcrumbs
- Melted butter
- Butter
Instructions
- Open the oysters, detach and beard them, and put each back into its deep shell.
- Arrange the shells on a tray covered with salt, setting them lightly into it so that they stand level.
- Squeeze a drop of lemon juice onto each oyster.
- Sprinkle each with a pinch of fried breadcrumbs and moisten with a little melted butter.
- Add a piece of butter the size of a pea on each oyster.
- Gratinate in a brisk oven or under the Salamander.
