Instructions

  1. Open the oysters, detach and beard them, and put each back into its deep shell.
  2. Arrange the shells on a tray covered with salt, setting them lightly into it so that they stand level.
  3. Squeeze a drop of lemon juice onto each oyster.
  4. Sprinkle each with a pinch of fried breadcrumbs and moisten with a little melted butter.
  5. Add a piece of butter the size of a pea on each oyster.
  6. Gratinate in a brisk oven or under the Salamander.
