Astragalus-Steamed Chicken for Consumptive Weakness

  1. Select a young hen that has never laid eggs and kill it without allowing it to touch water. Remove the internal organs carefully. Stuff one tael of astragalus root (黃芪) into the cavity. Place chopsticks beneath the bird inside a wok or steamer pot, and steam it with all sides sealed, until fully cooked. When done, remove it carefully.
  2. The resulting broth will be rich and fresh-tasting, and the dish is said to treat weakness and consumptive symptoms.
