Blancs-Mangers aux Fruits et aux Liqueurs (Fruit and Liqueur Blancmanges)

Instructions

  1. For a fruit Blanc-Manger, mix half fruit purée with half the Blanc-Manger composition given above, keeping the same dose of gelatine.
  2. Name the Blanc-Manger after the fruit used: strawberry, raspberry, apricot, peach, and so on.
  3. For a liqueur Blanc-Manger, allow half a decilitre of liqueur per litre of composition; Kirsch, Maraschino and Rum suit best.
  4. Chocolate and coffee Blancs-Mangers are also made, though coffee marries less well with the almonds than the other flavourings.
