Ingredients
- Fruit purée
- Blanc-Manger composition as given above
- Gelatine
- Liqueur — Kirsch
Instructions
- For a fruit Blanc-Manger, mix half fruit purée with half the Blanc-Manger composition given above, keeping the same dose of gelatine.
- Name the Blanc-Manger after the fruit used: strawberry, raspberry, apricot, peach, and so on.
- For a liqueur Blanc-Manger, allow half a decilitre of liqueur per litre of composition; Kirsch, Maraschino and Rum suit best.
- Chocolate and coffee Blancs-Mangers are also made, though coffee marries less well with the almonds than the other flavourings.
