Consommé à la Doria (Clear Chicken Consommé with Cucumber Balls and Cheese Choux Pearls)

Ingredients

• Consommé de volaille
• chicken forcemeat
• cucumber
• chervil pluches
• choux paste
• cheese

Instructions

1. Prepare small fluted quenelles of chicken forcemeat.
2. Cut cucumber into balls and glaze them.
3. Garnish the clear Consommé de volaille with the quenelles, the cucumber balls and chervil pluches.
4. Fry pearls of choux paste with cheese at the moment and serve them separately.
