Fraises à la Ritz (Strawberries à la Ritz)

Ingredients

• strawberries
• wild strawberries
• sauce Melba
• vanilla crème Chantilly

Instructions

1. Arrange well sugared and chilled strawberries in a timbale.
2. Pass 250 grammes of wild strawberries through a sieve.
3. Add a little sauce Melba to the purée, to colour it a fine pink.
4. Add the same volume of well firm vanilla crème Chantilly.
5. Cover the strawberries with this composition.
6. Chill strongly before serving.
