Whiting au Gratin

Instructions

  1. Score the whiting.
  2. Butter a dish, sprinkle the bottom with chopped shallots and cover it with a few spoonfuls of Sauce Gratin; lay the whiting on it.
  3. Surround the whiting with a border of overlapping slices of raw mushroom, and place 3 small cooked mushrooms on each whiting.
  4. Pour a few spoonfuls of white wine into the bottom of the dish and cover the whole with Sauce Gratin.
  5. Sprinkle with fine breadcrumbs and moisten with melted butter.
  6. Bake in an oven regulated so that the sauce reduces, the fish cooks and the gratin forms at the same time.
  7. On taking them from the oven, squeeze a few drops of lemon juice over the gratinated surface and sprinkle with a little chopped parsley.
