Whiting au Gratin

Ingredients
- whiting
- butter
- shallots
- Sauce Gratin
- raw mushrooms
- small cooked mushrooms
- white wine
- fine breadcrumbs
- melted butter
- lemon juice
- parsley
Instructions
- Score the whiting.
- Butter a dish, sprinkle the bottom with chopped shallots and cover it with a few spoonfuls of Sauce Gratin; lay the whiting on it.
- Surround the whiting with a border of overlapping slices of raw mushroom, and place 3 small cooked mushrooms on each whiting.
- Pour a few spoonfuls of white wine into the bottom of the dish and cover the whole with Sauce Gratin.
- Sprinkle with fine breadcrumbs and moisten with melted butter.
- Bake in an oven regulated so that the sauce reduces, the fish cooks and the gratin forms at the same time.
- On taking them from the oven, squeeze a few drops of lemon juice over the gratinated surface and sprinkle with a little chopped parsley.
