Côte de Veau en Papillote (Veal Chop in a Paper Case)

Ingredients

Instructions

  1. Sauté the veal chop in butter, or grill it.
  2. Butter or oil a sheet of strong paper cut in a heart shape.
  3. In the middle of it place one slice of lean ham, cut heart-shaped or triangular and about the size of the chop.
  4. Cover the ham with a spoonful of stiff sauce Duxelles.
  5. Place the chop on top and cover it with a second spoonful of sauce Duxelles.
  6. Finish with the second slice of ham, of the same shape and size.
  7. Fold the paper so as to enclose everything, crimp the edges, close the papillote and blow it up.
  8. Colour it in the oven.
