Alose Grillee (Grilled Shad)

Instructions

  1. To serve the shad whole, score it fairly finely and season it.
  2. Marinate it for 1 hour with oil, lemon juice, parsley stalks and fragments of thyme and bay.
  3. Grill it over a gentle fire for 35 to 40 minutes, feeding it often with melted butter.
  4. To serve it in slices, cut it into slices one and a half centimetres thick, season them and marinate them as above for 20 minutes.
  5. Grill the slices for 10 to 13 minutes, according to their thickness.
  6. In either case, dress on a dish bordered with slices of lemon.
  7. Serve Beurre maitre-d'hotel, Beurre d'anchois or another sauce suitable for grilled fish: in a sauceboat for the whole fish, over the fish for the slices.
