Alose Grillee (Grilled Shad)

Ingredients
- shad
- oil
- lemon juice
- parsley stalks
- thyme
- bay
- butter
- lemon
- Beurre maitre-d'hotel
Instructions
- To serve the shad whole, score it fairly finely and season it.
- Marinate it for 1 hour with oil, lemon juice, parsley stalks and fragments of thyme and bay.
- Grill it over a gentle fire for 35 to 40 minutes, feeding it often with melted butter.
- To serve it in slices, cut it into slices one and a half centimetres thick, season them and marinate them as above for 20 minutes.
- Grill the slices for 10 to 13 minutes, according to their thickness.
- In either case, dress on a dish bordered with slices of lemon.
- Serve Beurre maitre-d'hotel, Beurre d'anchois or another sauce suitable for grilled fish: in a sauceboat for the whole fish, over the fish for the slices.
