Omelette à la Paysanne (Country-Style Omelette with Bacon, Potato and Sorrel)

Ingredients
- eggs
- 50 grammes lean bacon
- butter
- 1 spoonful potatoes
- half a spoonful sorrel
- a pinch of chervil
Instructions
- Blanch the diced lean bacon.
- Brown the bacon in butter in a frying pan.
- Slice the potatoes into fine rounds and sauté them in butter.
- Melt the shredded sorrel in butter.
- Add the potatoes, the sorrel and the chopped chervil to the eggs.
- Pour the eggs over the lardons and cook them, keeping them soft.
- Turn the omelette over like a pancake and slide it at once onto a round dish.
