Omelette à la Paysanne (Country-Style Omelette with Bacon, Potato and Sorrel)

Instructions

  1. Blanch the diced lean bacon.
  2. Brown the bacon in butter in a frying pan.
  3. Slice the potatoes into fine rounds and sauté them in butter.
  4. Melt the shredded sorrel in butter.
  5. Add the potatoes, the sorrel and the chopped chervil to the eggs.
  6. Pour the eggs over the lardons and cook them, keeping them soft.
  7. Turn the omelette over like a pancake and slide it at once onto a round dish.
