- Prepare a chicken Consommé.
- Choose a wine that is absolutely perfect in quality.
- Add on average 8 centilitres of the wine per litre of Consommé.
- Name the Consommé for the wine used: au vin de Chypre, de Madère, de Malvoisie, de Marsala, de Samos, de Zucco, and so on.
