Punch glacé (Iced Punch)

Ingredients
- Punch Marquise, prepared as above
- grammes tea
- orange, peeled to the quick and sliced
- lemon, peeled to the quick and sliced
- decilitres rum, heated
Instructions
- Prepare a Punch Marquise as above.
- When the wine is hot, draw it off the fire, throw in 20 grammes of tea and let it infuse, covered, for 10 minutes.
- Pass it through a fine chinois.
- Add an orange and a lemon peeled to the quick and cut in slices, and 2 decilitres of heated rum.
- Flame it, let it cool, and bring it to 15 degrees.
- Freeze it as for a Granité, and serve in glasses.
