Omelette en surprise à l'Islandaise

Ingredients

Instructions

  1. Cut the sheet of génoise round instead of oval and place it on a round dish.
  2. Garnish it with any ice, dressed in the form of a truncated cone.
  3. Cover with meringue.
  4. Set on the summit a small round meringue case, made as explained at l'Omelette Napolitaine.
  5. Mask the case with meringue as the omelette is decorated, and colour briskly.
  6. Just at the moment of serving, pour a glass of heated rum into the meringue case and set it alight at the table.
