Omelette en surprise à l'Islandaise

Ingredients
- sheet of génoise
- ice
- meringue
- rum
Instructions
- Cut the sheet of génoise round instead of oval and place it on a round dish.
- Garnish it with any ice, dressed in the form of a truncated cone.
- Cover with meringue.
- Set on the summit a small round meringue case, made as explained at l'Omelette Napolitaine.
- Mask the case with meringue as the omelette is decorated, and colour briskly.
- Just at the moment of serving, pour a glass of heated rum into the meringue case and set it alight at the table.
