Soupe Cultivateur (Vegetable Soup with Bacon)

Ingredients
- 400 grammes carrot
- butter
- 1 litre and a half ordinary Consommé
- 2 small potatoes
- 125 grammes lean belly bacon without rind
Instructions
- Cut 400 grammes of carrot, turnip, leek whites and onion into a fairly large brunoise, without seeking regularity of cut.
- Stew them in butter gently and for a fair time.
- Moisten with 1 litre and a half of ordinary Consommé.
- Halfway through the cooking, add 2 small sliced potatoes and 125 grammes of lean belly bacon without rind, cut in dice or small lardons and well blanched.
- Serve; the bacon is the garnish of the soup.
