Instructions

  1. Slice 500 grammes of pumpkin and 300 grammes of potatoes and cook them with three-quarters of a litre of Consommé blanc.
  2. Pass through a tammy cloth.
  3. Bring to the correct consistency with half a litre of Consommé and butter at the moment of serving.
  4. For the garnish, shred 125 grammes of lettuce and sorrel leaves and melt them in butter.
  5. Sprinkle thin rounds of flûte with grated cheese and gratinate them, and serve with the soup.
