Purée Marianne (Pumpkin and Potato Purée)

Ingredients
- 500 grammes pumpkin
- 300 grammes potatoes
- three-quarters of a litre Consommé blanc
- half a litre Consommé
- butter
- 125 grammes lettuce and sorrel leaves
- thin rounds of flûte
- grated cheese
Instructions
- Slice 500 grammes of pumpkin and 300 grammes of potatoes and cook them with three-quarters of a litre of Consommé blanc.
- Pass through a tammy cloth.
- Bring to the correct consistency with half a litre of Consommé and butter at the moment of serving.
- For the garnish, shred 125 grammes of lettuce and sorrel leaves and melt them in butter.
- Sprinkle thin rounds of flûte with grated cheese and gratinate them, and serve with the soup.
