Soufflé Mixture made with Cooked Ham

Ingredients

Instructions

  1. Pound 500 grammes of well-lean cooked ham finely, adding the 3 spoonfuls of cold sauce Béchamel to it little by little.
  2. Pass the mixture through a fine sieve.
  3. Gather the paste in a sautoir and work in the 2 décilitres of sauce Béchamel with ham essence and the 5 egg yolks.
  4. Whip the 7 egg whites to a very firm snow and finish the mixture with them.
