Abricots Condé A (Apricots on a Vanilla Rice Border)

Ingredients

• Riz à Entremets (dessert rice)
• apricots
• candied fruits
• apricot syrup flavoured with kirsch
• butter

Instructions

1. On a round dish, form a border of vanilla-flavoured Riz à Entremets, shaped by hand or moulded in a plain, buttered border mould.
2. Arrange apricots poached in syrup on this border.
3. Decorate with candied fruits.
4. Coat with apricot syrup flavoured with kirsch.
