Hachis à l'Américaine (Meat Hash with Diced Potatoes)

Ingredients

Instructions

  1. Cut the potatoes into very small dice and sauté them in butter, taking the same quantity of potatoes as there is of hachis.
  2. Add half the potatoes to the hachis.
  3. Bind the hachis with tomato purée and reduced veal gravy, and heat it without letting it boil.
  4. Dress in a timbale.
  5. Scatter the rest of the diced potato, well rissolées, over the top and sprinkle lightly with chopped parsley.
