Welsh Rarebit

Ingredients
- Square or rectangular toast
- Butter
- Glocester or Chester cheese
- Cayenne
- A few spoonfuls of pale-ale (second method)
- A little English mustard (second method)
Instructions
- Grill square or rectangular slices of bread a centimetre thick and butter them.
- First method: cover the toasts with a thick layer of grated Glocester or Chester and sprinkle with cayenne.
- Pass them through the oven to melt the cheese and glaze the surface.
- Second (original) method: melt the cheese, cut in small dice or shredded, with a few spoonfuls of pale-ale and a little English mustard.
- As soon as the cheese is well melted, pour it over the grilled and buttered toast and smooth it briskly with the blade of a knife.
- Sprinkle with cayenne and cut up if required.
