Welsh Rarebit

Instructions

  1. Grill square or rectangular slices of bread a centimetre thick and butter them.
  2. First method: cover the toasts with a thick layer of grated Glocester or Chester and sprinkle with cayenne.
  3. Pass them through the oven to melt the cheese and glaze the surface.
  4. Second (original) method: melt the cheese, cut in small dice or shredded, with a few spoonfuls of pale-ale and a little English mustard.
  5. As soon as the cheese is well melted, pour it over the grilled and buttered toast and smooth it briskly with the blade of a knife.
  6. Sprinkle with cayenne and cut up if required.
