Consommé à la Florentine (Clear Chicken Consommé with Three Coloured Quenelles)

Ingredients

Instructions

  1. Divide the chicken forcemeat into three parts, the spinach part being double the others.
  2. Add tongue purée, or very finely chopped scarlet tongue, to the first part.
  3. Add purée of white of chicken to the second part.
  4. Add spinach purée to the third, double, part.
  5. Shape each forcemeat into small oblong quenelles.
  6. Garnish the clear chicken Consommé with the three kinds of quenelle, the green peas and the chervil pluches.
