Alose a la Provencale (Stuffed Shad Braised with Tomatoes, Provencal Style)

Ingredients
- shad
- Farce a poissons A (fish forcemeat A)
- garlic
- 300 grammes tomatoes
- 1 1/2 decilitres white wine
- salt
- pepper
- 3 spoonfuls oil
- 2 spoonfuls oil
- 30 grammes Beurre d'anchois
- chopped parsley
Instructions
- Gut the shad.
- Heighten the Farce a poissons A lightly with garlic and fill the shad with it.
- Braise it in a tray with 300 grammes of crushed tomatoes, 1 1/2 decilitres of white wine, salt, pepper and 3 spoonfuls of oil.
- Dress the shad and cover it with the tomatoes.
- Reduce the braising liquid and finish it with 2 spoonfuls of oil and 30 grammes of Beurre d'anchois; pour it over the fish.
- Sprinkle with chopped parsley.
