Beer Soup (Soupe à la Bière, German cookery)

Ingredients

Instructions

  1. Slake 175 grammes of blond roux with 1 and three quarter litres of light beer.
  2. Season with 12 grammes of salt, a pinch of pepper, 15 grammes of powdered sugar and a small pinch of powdered cinnamon, and bring to the boil.
  3. Finish at the moment of serving with 2 and a half decilitres of double cream.
  4. Pour boiling over slices of grilled bread.
