Ingredients

Instructions

  1. Fill buttered oval rice-cake moulds with pomme duchesse mixture and turn them out.
  2. Bread the cases à l'anglaise, fry them and hollow them out.
  3. Garnish with escalopes of roast quail fillets kept juicy, small quenelles of quail forcemeat with cream, and slices of truffle.
  4. Serve with Sauce Demi-glace flavoured with quail fumet.
