Ingredients
- Pomme duchesse mixture
- Butter
- Egg and breadcrumbs
- Roast quail fillets
- Small quenelles of quail forcemeat with cream
- Truffle
- Sauce Demi-glace with quail fumet
Instructions
- Fill buttered oval rice-cake moulds with pomme duchesse mixture and turn them out.
- Bread the cases à l'anglaise, fry them and hollow them out.
- Garnish with escalopes of roast quail fillets kept juicy, small quenelles of quail forcemeat with cream, and slices of truffle.
- Serve with Sauce Demi-glace flavoured with quail fumet.
