Croquettes de Pommes de terre (Potato Croquettes)

Instructions

  1. Peel the potatoes and cut them in quarters.
  2. Cook them briskly in salted water, keeping them a little firm.
  3. Drain them, dry them at the mouth of the oven, and pass them through the sieve.
  4. Dry out the purée with 100 grammes of butter.
  5. Season with salt, pepper and nutmeg, and bind off the fire with 1 whole egg and 4 yolks per kilo of purée.
  6. Divide the mixture into portions weighing 60 grammes and mould them in the shape of a cork, a pear or an apricot.
  7. Breadcrumb them à l'anglaise.
  8. Plunge into plenty of hot frying fat 5 or 6 minutes before serving.
