Croquettes de Pommes de terre (Potato Croquettes)

Ingredients
- potatoes
- salted water
- 100 grammes butter
- salt
- pepper
- nutmeg
- 1 whole egg
- 4 egg yolks
- coating à l'anglaise
- frying fat
Instructions
- Peel the potatoes and cut them in quarters.
- Cook them briskly in salted water, keeping them a little firm.
- Drain them, dry them at the mouth of the oven, and pass them through the sieve.
- Dry out the purée with 100 grammes of butter.
- Season with salt, pepper and nutmeg, and bind off the fire with 1 whole egg and 4 yolks per kilo of purée.
- Divide the mixture into portions weighing 60 grammes and mould them in the shape of a cork, a pear or an apricot.
- Breadcrumb them à l'anglaise.
- Plunge into plenty of hot frying fat 5 or 6 minutes before serving.
