Vin chaud (Hot Spiced Red Wine)

Ingredients
- bottle red wine
- grammes lump sugar
- lemon zest
- A fragment of cinnamon
- A fragment of mace
- clove
- Thin slices of lemon, to serve
Instructions
- Pour a bottle of red wine over 200 grammes of lump sugar in a copper pan, and dissolve the sugar.
- Add a lemon zest, a fragment of cinnamon and of mace, and a clove.
- Heat the wine until it covers itself with a fine foam.
- Pass it through a fine chinois.
- Serve with a thin slice of lemon in each glass.
