Noques au Parmesan (Noques with Parmesan)

Ingredients

Instructions

  1. Put the beurre manié into a terrine warmed beforehand and work it with salt, pepper and nutmeg.
  2. Add little by little the 2 eggs and 2 yolks beaten as for an omelette, then the flour, then the egg white whipped to a very firm snow.
  3. Divide the composition into hazelnut-sized pieces.
  4. Drop them into a sautoir of salted boiling water and poach them.
  5. Drain the noques on a cloth and arrange them in a timbale.
  6. Sprinkle copiously with grated cheese and sprinkle with Beurre noisette.
