Salade Sicilienne (Apple, Celeriac and Tomato Salad)

Ingredients
- reinette apples (equal part)
- celeriac (equal part)
- tomato flesh (equal part)
- artichoke bottoms (equal part)
- oil
- lemon juice
Instructions
- Blanch the celeriac.
- Cut the reinette apples, celeriac, tomato flesh and artichoke bottoms into dice, in equal parts.
- Season with oil and lemon juice.
