Poulet de Grains Mireille (Spring Chicken on a Base of Pommes Anna and Artichokes)

Instructions

  1. In an earthenware dish the dimensions of the chicken, make a base of pomme Anna, adding to the potatoes a third of raw artichoke bottoms.
  2. Split the chicken as for grilling, flatten it and remove as many of the bones as possible.
  3. Season the chicken and cook it half through in the oven.
  4. When the potato base is three quarters cooked, place the chicken on top.
  5. Complete the cooking of both elements together, basting frequently with melted butter.
  6. Serve just as it is, in the dish.
