Potatoes with Bacon

Ingredients
- 250 grammes belly bacon
- 12 small onions
- butter
- 30 grammes flour
- three quarters of a litre Consommé
- a pinch of pepper
- 1 kilo medium potatoes
- 1 bouquet garni
- chopped parsley
Instructions
- Brown 250 grammes of diced, blanched belly bacon and 12 small onions in butter.
- Drain the bacon and onions, keeping the butter.
- Mix 30 grammes of flour into the butter and cook it for a few minutes.
- Moisten with three quarters of a litre of Consommé and season with a pinch of pepper.
- Add 1 kilo of medium potatoes cut into well-trimmed quarters, the bacon and onions, and a bouquet garni.
- Cover and cook gently.
- Dress in a timbale and sprinkle lightly with chopped parsley.
