Potatoes with Bacon

Ingredients

Instructions

  1. Brown 250 grammes of diced, blanched belly bacon and 12 small onions in butter.
  2. Drain the bacon and onions, keeping the butter.
  3. Mix 30 grammes of flour into the butter and cook it for a few minutes.
  4. Moisten with three quarters of a litre of Consommé and season with a pinch of pepper.
  5. Add 1 kilo of medium potatoes cut into well-trimmed quarters, the bacon and onions, and a bouquet garni.
  6. Cover and cook gently.
  7. Dress in a timbale and sprinkle lightly with chopped parsley.
