Lapwing Eggs in Aspic (Cold)

Ingredients
- lapwing eggs
- jelly
- decoration
Instructions
- Line a border mould with jelly.
- Decorate it as you please, fixing the details of the decoration with a few drops of jelly.
- Cover the decoration with a few spoonfuls of jelly and let it set.
- Arrange the hard-boiled, shelled lapwing eggs on this jelly, point downwards, so that they stand upright after unmoulding.
- Finish filling the mould with jelly, added in successive layers.
- Unmould onto a napkin at the moment of serving.
